Marinated salmon with ATTIKI honey

Quantity: serves 2

500 g salmon fillet
1 garlic clove
2 tablespoons ATTIKI honey
2 tablespoons soy sauce
10 pepper corns
½ teaspoon thyme
2 teaspoons olive oil
1 leaf of rose geranium, optional
1 green onion
coarse salt

Grind the pepper, thyme and garlic with a mortar and pestle. Add the olive oil, soy sauce, ATTIKI honey, and spread on the salmon. Marinate the salmon for at least 2 hours, covered in the refrigerator. Preheat the oven to 200 degrees Celsius, wrap the salmon and the rose geranium leaf in parchment paper and bake for 20 minutes. Season with coarse salt, and serve with finely chopped green onion and boiled vegetables.

Tip: You can add ginger or lemon zest in the marinade sauce if you like.
