Greek salad with quinoa, beets and ATTIKI honey

Quantity: serves 4

80 g quinoa
1 beetroot
1 carrot
1 avocado
1 handful of green salad of your choice
1 green onion
2 limes
2 tablespoons olive oil
1 ½ teaspoons ATTIKI honey
2 sprigs of coriander or parsley
1 tablespoon anthotyro cheese


Put the quinoa in a small pot, cover with water and boil until it softens and absorbs all the water. Boil the beetroot until soft, let it dry on kitchen paper and coarsely grate  it. Grate the carrot, finely chop the onion and cut the avocado into slices. Mix all the above ingredients in a bowl. Put the olive oil, honey, lime juice and 2 teaspoons of water in a blender. Line a salad bowl with the green salad leaves, put in the quinoa salad, drizzle with the dressing and add some anthotyro cheese on top if you like.
