Pumpkin soup with sage and ATTIKI honey

500 g pumpkin
1 tablespoon butter
1 carrot
1 onion
1 garlic clove
700 ml hot vegetable or chicken broth
1 tablespoon ATTIKI honey
3 sage leaves
¼ teaspoon cumin
yoghurt or coconut milk for serving


Cut the pumpkin into medium-sized pieces and finely chop the onion. Sauté the onion, garlic and pumpkin in a pot for 3-4 minutes. Add the ATTIKI honey, the sage, the cumin and the broth. Boil on low heat for 25 minutes, adding salt to taste. Emulsify and serve the soup in bowls, adding some yoghurt or coconut milk.
