
Honey Carrot Cake

Ingredients:
For the cake
220 g all purpose flour
300 g carrots
275 g ATTIKI Honey
155 ml buttermilk
190 ml vegetable oil
30 g breadcrumbs
100 g raisins and sultanas
55 g walnuts
1 apple
3 eggs
1¼ teaspoon baking powder
1 teaspoon baking soda
1 tablespoon vinegar
1 teaspoon fresh ginger
½ teaspoon cinnamon powder
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon salt
1 teaspoon vanilla extract or essence
For the cream cheese frosting
275 g cream cheese
300 g powdered sugar
20 g butter
Directions
Preheat the oven to 180 degrees Celsius. Coarsely grate the carrots and the apple. In a bowl, sift together the flour, salt, baking soda and baking powder, mix in the breadcrumbs, raisins and walnuts. Using a mixer beat the eggs, oil, buttermilk, ATTIKI honey, ginger and spices, stop beating and continue mixing with a spatula. Gradually add the carrots, apple and the mixture you prepared. Finally add the vinegar and stir well. Put the batter aside. Line a 20 cm round non-stick pan or cake ring with parchment paper, and pour in the batter. Bake the cake for 55-60 minutes at 180 degrees Celsius, remove from the pan and let it cool. Prepare the cheese frosting. Beat all its ingredients in the mixer for 2 minutes and refrigerate. When the cake cools down, spread the sweet cheese frosting on it, and if you desire decorate with the raisins, sultanas and finely chopped walnuts.
