
Apple & Honey Cake

Ingredients
For the cake
- 3 large eggs
- All-purpose flour
- ¾ cup Attiki Honey
- ½ cup sugar
- ¼ cup brown sugar
- 1 ¼ cups olive oil
- 1 ½ tablespoons vanilla powder
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- ¾ teaspoon salt
- ½ teaspoon clove powder
- 4 apples, peeled and grated (add lemon to prevent turning brown)
For the glaze
- 1 cup & 3 tablespoons caster sugar
- 2 tablespoons lemon juice
- 1 tablespoon Attiki honey
- ½ teaspoon vanilla extract
- 2 oranges, zest
Execution
- Preheat the oven to 180o
- In a large bowl, beat the eggs until they become a fluid mixture.
- Add the honey, white sugar, brown sugar, oil and vanilla.
- In another medium-sized bowl, add the flour, baking soda, cinnamon, salt and spice mix.
- Pour the solid flour mixture into the liquid mixture and stir until it becomes homogeneous. Add the grated apples.
- Spray the cake pan with a cooking spray, making sure it goes evenly over the entire surface.
- Pour the mixture into the cake tin, making sure the mixture covers ¾ of the tin, so that it doesn’t spill out of the baking tin edges.
- Bake in a preheated oven for 75 to 90 minutes. Once the cake edges start turning brown and its top surface gets darker, insert a toothpick into the cake to check if it is ready. If the toothpick comes out clean, the cake is done and you can take it out of the oven.
- Leave the cake out of the oven for 10 minutes. Remove the baking tin and let the cake cool. Decorate the cake the day you want to serve it.
- Sprinkle the cake evenly with 3 tablespoons of caster sugar.
For the glaze
Add all the glaze ingredients into a small bowl. Mix very well until the mixture thickens and becomes uniform. If you want a thicker glaze, add more caster sugar.
Pour the glaze over your cake and let it run down the sides. Let it cool for 30-60 minutes and serve. Sprinkle with orange zest.
