
Green salad with figs, walnuts and honey

Ingredients
1 lollo lettuce
1 bunch rucola
4 spring onions (incl. the soft green part), minced
2 tablespoons dill, minced
150 grams corn
5 dried figs, minced
8 walnuts unshelled, chopped
For the sauce
8 tablespoons olive oil
2 tablespoons Attiki honey
Juice of 1 large lemon
1 teaspoon lemon zest
Salt, paper
Execution
For the salad
- Wash the lettuce and rucola very well. Cut into medium-sized pieces. Put the vegetables into a large salad bowl.
- Finely chop the spring onions, add them to the lettuce and mix.
- Add the figs, corn, dill and half of the walnuts.
For the sauce
In a jar with a tightly sealed lid, add the olive oil, honey, lemon juice, lemon zest, salt and pepper. Close the jar and shake well enough to combine the ingredients.
For the composition
Pour the dressing over the salad, mix very well and transfer to a platter. Sprinkle with the remaining figs and walnuts.
