ISLAND MELALEVRIA
A HONEY AND FLOUR DESSERT (Makes 6 individual portions)
Ingredients
- 1½ cups honey
- 4 cups water
- 4 tablespoons flour
- 1 tablespoon sesame seeds
- 3 tablespoons ground almonds or walnuts, peeled
- cinnamon
Method
Lightly brown the flour in a non-stick frying pan over low heat. Place the honey and water in a small saucepan and bring to the boil over medium heat, stirring continuously with a wooden spoon. Add some cold water to the flour and add to the saucepan. Stir the melalevria continuously. When it starts to thicken, remove from heat. Skim the foam from the surface of the mixture. Before mixture cools completely, pour into individual bowls and sprinkle with walnuts – or almonds – and sesame seeds.
